I made this tasty orzo salad recipe a few nights ago and felt it worth sharing. Note: The original recipe makes only 2 (main dish) servings, so I doubled the recipe but used the amount of mint and artichoke hearts called for in the original recipe. This seems like a recipe that could be played with a bit, and would also make a nice side dish. An easy and light vegetarian dish for summer!
