Retro Recipe of the Week: Vegetable Potato Chip Casserole (With Weiners!)

Because Superbowl Sunday is coming up, I thought that this week’s recipe of the week should feature something you would find at many Superbowl parties, though in a more retro form (in other words, it’s junk food masquerading as wholesome food because it’s in casserole form!). Ingredients include “weiners” AND potato chips! This recipe comes from The Charm Kitchen Cook Book, published in 1948, available from my Etsy shop. "Cook for a man so he loves it, then he'll love the cook!". I am definitely making this casserole this weekend.

VEGETABLE POTATO CHIP CASSEROLE

In double boiler, cook until slightly thickened:

1 1/2 tsp melted margarine
1 1/2 tbsp flour
1/2 tsp salt
1 1/2 cups milk
1/2 tsp paprika
1/2 cup grated cheese

In greased casserole, put the following, half of each, until two layers are formed:

1 can peas - drained
1 cup diced ham (weiners, etc.)
1 1/2 cups crushed potato chips

Over top layer, pour white sauce. Dot with margarine. Then add: dash paprika. Bake 30 min. - 350˚.

Mod Homes at White Rock Lake, Texas

On a visit out to the Dallas/Fort Worth area last summer, my Dad wanted to pop over to the yacht club at White Rock Lake, where he sailed in the summer of 1960.  I discovered a treasure trove of 50's mod homes that overlook the docks at the yacht club.  Oh, if you decide to seek out these homes, I didn't send you OK?  It's a private club, so you're a "prospective member just going to check it out."

I really like the rowboat hung from the rafters of the front porch.  It's nautical mod.  Hey, did I just coin a new phrase?
Nestled amongst the live oaks, this mid-century beauty has some great angles.  Loving the porch railing.

Ok, so forks are not the first thing you think of regarding presentation when you're entertaining, but forks make a huge statement! Here are some of my favorites, from Etsy. I found so many, I can pretty much guarantee there will be a "Forks" part two at some point.

Why is it that when I'm hibernating in winter, it makes me want to bake? Maybe it's all of those 50's cookbooks I sell, they make me nostalgiac for the "old" cookie recipes. I need all of these vintage Etsy finds to make me a happy little homemaker. I'm going to make some hermits, ginger creams, coconut ice box cookies, jumbles....

It's snowing here, and I'm like a little kid when it comes to snow. Because of "climate Change", we rarely get snow in Chattanooga anymore. Thus, the "Let it Snow" Etsy finds theme!

Craving Unique Pyrex?

I've owned six houses, several of which I lived in for less than a year because I bought them to renovate and re-sell. I seem to keep painting the doors orange or red. There's just something about that color that makes one want to see what's inside...

Recipe of the Week: Yummy Coconut Cuties

This recipe of the week comes from the 1950's Suburban Cookie Book, available from www.thecottagecheese.etsy.com. Enjoy!

Coconut Cuties

1 c shortning
1 c brown sugar
1 c coconut
2 eggs
1 1/2 c sifted flour
3 c quick oats
1 c white sugar
1 tsp soda
1 tsp vanilla
1 tsp salt

Form into small balls, roll in sugar, and leave plenty of room for them to spread on the baking sheet. Bake in a 400 degree oven 12 to 15 minutes. Yields about 4 dozen.
