Retro Recipe of the Week: Vegetable Potato Chip Casserole (With Weiners!)

Because Superbowl Sunday is coming up, I thought that this week’s recipe of the week should feature something you would find at many Superbowl parties, though in a more retro form (in other words, it’s junk food masquerading as wholesome food because it’s in casserole form!). Ingredients include “weiners” AND potato chips! This recipe comes from The Charm Kitchen Cook Book, published in 1948, available from my Etsy shop. "Cook for a man so he loves it, then he'll love the cook!". I am definitely making this casserole this weekend.



VEGETABLE POTATO CHIP CASSEROLE

In double boiler, cook until slightly thickened:

1 1/2 tsp melted margarine
1 1/2 tbsp flour
1/2 tsp salt
1 1/2 cups milk
1/2 tsp paprika
1/2 cup grated cheese

In greased casserole, put the following, half of each, until two layers are formed:

1 can peas - drained
1 cup diced ham (weiners, etc.)
1 1/2 cups crushed potato chips

Over top layer, pour white sauce. Dot with margarine. Then add: dash paprika. Bake 30 min. - 350˚.

Oh, it IS delicious Rachel. I made it for our Superbowl dinner. I'll definitely keep a copy of the recipe!
